Aurum Poultry launches connoisseur merchandise

Australian specialty poultry producer Aurum Poultry Co. has teamed up with Melbourne charcuterie artisans, City Larder, to introduce three new gourmet Aurum Fine Food products to market.

The collaboration showcases Aurum Poultry Co.’s signature Fook Wong Cockerel – a young rooster chicken, slow grown for 100 days on Aurum’s collective of Victorian collaborator farms – bringing gourmet flair, exceptional quality, unique flavours and convenience to home dining.

The new Aurum Fine Food products are:

  • Cockerel Liver Pâté – 100g jar ($10.90) & 1.4kg log (wholesale price available) – A creamy pâté flavoured with ginger and garlic, perfect for spreading on sourdough or elevating a bánh mì.
  • Cockerel, Moorabool Valley Corn-Fed Duck and Chive Terrine – 150g sliced ($12.90) & 1.4kg log (wholesale price available) – A richly textured terrine, lightly seasoned to let the rich flavours of the cockerel and duck sing. Individually sliced it makes the perfect addition to any charcuterie board or picnic basket, or even given a spicy twist served with a drizzle of chilli oil to create a unique cold entrée.
  • Cockerel Double Stock – 500mL ($8.90) & 1L ($15.90) – A robust, deeply flavoured stock, slow cooked for nine hours, without any additives, preservative or colours added, ideal for soups, congee, or hot pot dishes.

Robbie Bell, Head Charcutier of City Larder, says working with Aurum Poultry is a real joy.

“The quality of its slow-grown Fook Wong Cockerel is fantastic,” he said. “We love using the whole bird, from premium cuts like the breast to byproducts like the livers and feet. When the produce is this good, it’s all about letting the natural flavours speak for themselves.”
