Melbourne's Queen Victoria Market is actively seeking expressions of interest from seven food and beverage operators for its planned, revitalized, state-of-the-art food hall.
In close cooperation with the global food and hospitality consultants Future Food, the market is looking for self-confident and capable operators who can demonstrate a focus on local products in unique food and beverage specialties.
The redesign of the Food Hall, which is expected to open from July 2022, will represent a new social goal within the market. The new Food Hall, advertised as more than just a place to eat in between, is designed to showcase Melbourne's "unmatched foodie culture," complete with a dedicated area where customers can "relax and soak up the great market atmosphere".
Queen Victoria Market calls for a diverse selection of cuisine and beverage choices in takeaway, casual dining, and dining options. Possible culinary and culinary specialties include all-day cafes, modern Asian cuisines, taquerias, burger and sandwich bars, wood-fired pizzas, ramen and noodles, sweets and delicacies, as well as juices and healthy foods.

The market expression of interest application invites operators to demonstrate their skills in the areas of the main criteria:

Expressions of interest are now possible and will be closed on Thursday, September 30th.
Shortlisted applicants will be notified at the end of October and will be asked to present their offer in a formal presentation in December.
Successful operators will be notified in January 2022.
