Bippi launches ‘luxurious’ vodka sugo

Vodka pasta has become one of the most talked-about Italian dishes in recent years a creamy, comforting classic that sits somewhere between nostalgia and modern indulgence. Once a restaurant favourite, has now quickly found its way into home kitchens around the world. With the launch of Vodka Sugo, Melbourne food brand Bippi has bottled that experience.

“Vodka Sugo is our most indulgent jar yet,” says Bippi. “A creamy, velvety sugo crafted with the finest Roma tomatoes from Emilia-Romagna, extra virgin olive oil, cream, parmesan and a delicate splash of vodka to deepen the sauce ’s flavour.”

Each batch is cooked slowly, “just like Nonna would”, to bring the ingredients together in balance creating a sauce that feels both comforting and indulgent. In Italian cooking the philosophy has always been simple, start with good ingredients and let the flavour speak for itself.

Bippi’ s story begins long before the first jar ever hit the shelf. In 1955, Nonna Emilia migrated from Calabria in southern Italy to the rural Victorian town of Mildura, bringing with her a collection of traditional handmade recipes that would become the heart of the family table. Among them was her chilli, known in the family simply as “Bippi” – a jar of bold flavour that sat front and centre at every meal. 

Growing up next door to his grandparents in Mildura, founder Ben Circosta was surrounded by the rituals of Italian home cooking, meals shared around the table, produce grown in the backyard and recipes passed down through generations.

At the end of each chilli harvest, Nonna Emilia would preserve the excess in jars, creating the condiment the family called “Bippi”. It was simple, bold and designed to go with everything – the kind of flavour that instantly became part of every meal. These traditions of generosity, simplicity and bold flavour would later inspire the foundations of the brand.

More than sixty years later, Ben set out to bring those same flavours beyond the family table, creating Bippi to celebrate the warmth, generosity and bold tastes of Italian cooking.

That philosophy continues with the introduction of Vodka Sugo, a modern take on one of Italy’ s most loved pasta sauces.
